SuperHero Muffins!

Happy Tuesday! I hope your week is going smooth and you’ve done allllll your holiday shopping. Anyone else feel like this is the longest week of their lives? Hopefully you’re all done wrapping, shopping and decorating and can coast into the holiday stress-free.

If you follow along to my RD instagram and tiktok page you may have seen my most recent video making superhero muffins. They are sooo yummy I just HAD to share the recipe with you. Shalane Flanagan (professional runner and author) wrote the cook book Run Fast, Cook Fast, Eat Slow, where you can find the recipe to these muffins and a bunch of other yummy dishes! These muffins are oh so delicious and filled with lots of nutrient-dense ingredients. This specific superhero muffin called for pumpkin. This was perfect for me, as I had left over cans of pumpkin from Thanksgiving!! Pumpkin is rich with a variety of vitamins, minerals and anti-oxidants. Amongst the many health benefits pumpkin has to offer, I’m most pumped for the immune-boosting qualities. I don’t know about you, but almost everyone I know has recently been sick with a chest cold or virus!

Alright Aly enough jibber jabber - let’s get to the recipe!

Ingredients:

  • 2 cups almond meal (*I used almond flour, you could easily sub this out for any flour of your choosing: all-purpose / whole wheat)

  • 1 1/2 cups old fashioned rolled oats.

  • 1 Tablespoon pumpkin pie spice

  • 1 teaspoon baking soda

  • 1/2 teaspoon fine sea salt

  • 1/2 cup walnuts/raisins/chocolate chips (*I used chocolate chips)

  • 3 eggs

  • 11/2 cups canned pumpkin puree unsweetened (*I gave Luna the left over - benefits for doggo: settle down an upset stomach , improve digestion, reduce anal gland problems, prevent hairball build up and help dogs and cats with both constipation and diarrhea)

  • 6 Tablespoons unsalted melted butter

  • 1/2 cup maple syrup

Directions:

  1. Preheat oven to 350F

  2. Large bowl: combine dry ingredients (flour, oats, pumpkin pie spice, baking soda, salt, walnuts/raisins/choco chips.

  3. Separate bowl: whisk wet ingredients (eggs, pumpkin puree, melted butter, syrup)

    1. Add dry ingredients to the wet - mix until combines

  4. Spoon batter into muffin tin

  5. Bake until nicely browned on top ~30-35 minutes :)

    1. *knife trick* insert a knife in the center of a muffin and make sure it comes out clean

  6. Store leftovers in the fridge / freezer

  7. Warm it up in the microwave on a cold morning for an addition to your breakfast :)
